Ingredients
Scale
Potatoes
- 2 medium russet potatoes
Toppings
- 1 cup shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 cup diced tomatoes
- 2 tablespoons sliced green onions
- 2 tablespoons chopped fresh cilantro
- 1/4 cup cheese sauce
- 1 lime, cut into wedges
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare Potatoes: Start by rinsing your russet potatoes under cold water to remove any dirt. Afterward, pierce each potato several times with a fork to allow steam to escape during cooking.
- Microwave Potatoes: Place the prepared potatoes in a microwave-safe bowl, then cook on high power in the microwave for 8 to 10 minutes until tender.
- Cut and Fluff: Carefully remove the bowl from the microwave and cut each potato in half. Use a fork to gently fluff the inside of the potatoes for a soft, airy texture.
- Add Beans and Cheese: Layer the black beans inside the potatoes and generously sprinkle shredded cheddar cheese on top. Return the bowl to the microwave for an additional 1 to 2 minutes, allowing the cheese to melt perfectly.
- Finish and Serve: Drizzle the cheese sauce over the melted cheese, then add the diced tomatoes, sliced green onions, and chopped cilantro. Season with black pepper and salt, and finish with a squeeze of lime juice before serving.
Notes
- Use a fork to pierce the potatoes so they cook evenly and prevent bursting.
- Adjust microwave cooking times based on your microwave’s wattage and potato size.
- Feel free to substitute cheddar cheese and cheese sauce with vegan alternatives for a dairy-free option.
- Leftover loaded potatoes can be refrigerated and reheated but are best served fresh.
- Add sour cream or avocado for an even creamier texture.
