Ingredients
Scale
Chicken
- 2.25 cups shredded chicken (bite-sized pieces)
Dairy and Cheese
- 8 oz cream cheese (softened to room temperature, about 70°F)
- 1/3 cup sour cream
- 1.5 cups mozzarella cheese (1 cup + 1/2 cup, freshly grated)
- 1.5 cups cheddar cheese (1 cup + 1/2 cup, freshly grated)
- 2 tbsp blue cheese crumbles (preferably Treasure Cave)
Seasoning and Sauce
- 1/2 cup buffalo sauce (Frank’s RedHot recommended)
- 1/2 tsp garlic powder
Garnish
- 1 green onion (thinly sliced on a bias)
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C) to prepare for baking the dip.
- Mix base ingredients: In a medium bowl, combine softened cream cheese, buffalo sauce, sour cream, and garlic powder. Stir until smooth and fully mixed to create a creamy buffalo base.
- Add chicken and cheese: Fold in the shredded chicken, 1 cup mozzarella, and 1 cup cheddar cheese into the buffalo base, making sure everything is evenly distributed.
- Transfer to baking dish: Pour the mixture into an oven-safe baking dish, spreading it out evenly.
- Bake the dip: Place the dish in the preheated oven and bake for about 20 minutes or until the dip is bubbly and the cheese has melted thoroughly.
- Add remaining cheese and blue cheese: Remove the dip from the oven, sprinkle the remaining 1/2 cup mozzarella, 1/2 cup cheddar, and 2 tablespoons of blue cheese crumbles evenly on top.
- Second bake: Return the dish to the oven and bake for an additional 5 minutes to melt and slightly brown the top cheeses.
- Garnish and serve: Once baked, take the dip out, sprinkle with thinly sliced green onions for freshness and presentation. Serve immediately with keto-friendly dippers such as celery sticks, pork rinds, or low-carb crackers.
Notes
- Use freshly grated cheese for better melting and texture.
- Chicken can be pre-cooked or leftover rotisserie chicken for convenience.
- Adjust buffalo sauce amount to control the spice level.
- For a thicker dip, chill mixture before baking or bake longer until desired consistency.
- Serve with keto-friendly dippers to keep it low carb.
