Instructions

  1. Prepare the Sweet Potato: Peel and chop a medium sweet potato into chunks, then boil or roast until soft. Mash it until smooth and set aside to cool slightly.
  2. Make the Pancake Batter: In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, and salt. In another bowl, combine mashed sweet potato, milk, eggs, melted butter, and vanilla extract, mixing well. Gradually fold the wet ingredients into the dry mixture until just combined, keeping the batter slightly lumpy.
  3. Cook the Pancakes: Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup batter per pancake onto the skillet. Cook for 2–3 minutes on each side or until golden brown and cooked through, flipping when bubbles form on the surface.
